Banana shake

Serve 1 glass large
Ingredients
2 riped bananas cut into pcs
3/4 cup of milk
2 drops of vanilla
2 cubes of ice

METHOD
Mix all ingredients toghether into mixer and churn them for a minute.
serve cold.

Baigan ka bharta or mashed egg plant saute with onion and tomato

This recipe is simple and tasty . and will get ready in no time .

Serves 2-4
Ingredients

2-3 large sized egg plant
1 onion chopped fine
3 medium size tomato chopped fine
2 fresh green chillies
oil to fry 4-5 Tbsp
yellow powder(optional)
salt
coriander handful

METHOD
Roast egg plants directly on fire to make them cook and give them smoky Flavour.

let oil get hot in frying pan .

put onion and cook untill they get translucent .

put green chillies and tomatoes .
cook untill they get soft .

put salt as per your taste .

yellow powder optional.

now peel and mash egg plants with your hands and saute in the pan untill oil comes out .

you can eat mashed egg plants with bread or fresh Indian bread.

Indian cottage cheese recipe

Makes about 200 gms of Paneer

Ingredients
1 litre of full cream milk
2 juicy lemons or 2 Tbsp vinegar

Things used
1 muslin cloth to tie
any heavy bottle or stone having weight of 3-5 kgs

METHOD
Boil 1 litre of milk .

Squeeze 2 lemons in the milk 

watch if milk forms clusters and leave water. If you do not see milk leaving water then you must squeeze more lemon or you can also try vinegar instead .

drain liquid in muslin cloth when it is still hot and tie it loose.

now this is very important, you must leave your tied cheese under heavy weight for Atleast 20 minutes.
allow it to set .

Parmesan mayo chicken

Serves 8  pcs
ingredients
8 thigh chicken pcs
1/4 cup of mayo
1/4 cup of parmesan cheese
2 cloves of garlic
2 red fresh chillies
bread crumbs seasoned

METHOD
Slit chicken with a knife .
Marinade  with salt , crushed red chilli and garlic for 2 hrs.
Brush chicken with mixture of mayo and parmesan cheese from both sides.
Top with bread crumbs .
Roast in oven for 20-30 minutes till its done nicely .
Broil for few minutes at the end .
to give nice golden brown colour .

Wheat butter dinner rolls

They are soft , fluffy, healthy ,fresh and easy to make.Serves 10 rolls of small size

Ingredients
3/4 cup of wheat flour
1/4 cup of all purpose flour
1tsp salt
1 Tbsp of sugar
1tsp of dry active yeast
1 1/2 cup of water
Butter about 10 Tbsp

METHOD

Activate yeast in warm water . Mix all dry ingredients and water and make dough . Let the dough be sticky .

Let it sit for 45-60 minutes .

After which Divide them into 10 portions of small size .

Dust the surface and roll them into long oval shaped disc about size if your palm.

Apply butter on surface  and fold it into half , then again apply butter on upper side all over . Now start rolling them from one side till the end . Repeat for all 10 portions .

Keep them for another 30 minutes in the mean time pre heat oven at 180 degrees.

Bake them in oven for 20 minutes . I usually broil in the end for 2 minutes to give nice golden brown colour on top of rolls .

Wheat pasta/ noodle

Try making this pasta at home and you and your kids will love it for sure , apart from extra 1 hour of cooking time there is not much to it . And i feel thats not a big price to pay when you are making it sure  your family is taking healthy food. This recipe is for sure will give you boost of making it so perfect.


Serves 2
Ingredients

1 cup of wheat flour 

2 eggs big size 

1/2 tsp of salt 

1 Tbsp of olive oil 

White flour or corn flour to dust and roll . 


Method 

Make dough with egg and salt . Knead it nicely with olive oil on your hands . 

Leave it for 20 minutes . Divide dough into 8 portions and make them round . 

Leave it for another 20 minutes . 

Now dust the surface and use a roller to make long and thin shaped discs . Use dry flour as much and strech it with roller as thin as you like your noodles to be .

 Now roll all the discs and keep them separate make sure you dust them well . When you finish all, take knife and cut into thin strips one by one , lift it with knife from one side carefully and dry them on hanger.

Or 

You could use pasta maker to cut them and save all these efforts .

Rava cheela or semovita pan cakes

Serves 15 pancakes medium size
Ingredients
2 cups of semovita
2 carrots
Cabbage 2 cups
1 -2 Green chilli crushed
Jeera seeds 1/2 tsp
Water about 1/2 litre -1 litre
Salt
Oil to fry

Method mix semovita and all the ingredients toghether with water , consistency should not be too watery or too thick . Let mix stay for 20 minute , it will allow semovita to absorb veggies salt and water .
Take flat pan put 2 tsp of oil and spread on pan . Let pan be very hot .now take about 1/2 cup of batter and pour into the pan and press it with the spatula and expand it to make it round. Let it cook on low to medium flame untill it turns golden brown , cook from other side with tsp of oil on the sides .

Serve it with mint chutney or coriander chutney .

Dahi butti or yogurt rice

Serves 2 cooking time 10 min / 20 min
Ingredients
1 cup rice leftover or freshly cooked
2 cups of thick yogurt
4 Tbsp oil to temper
1 tsp of mustard seeds
2-3 red whole chilli
1 green chilli
1/2 inch ginger
1/2 tsp of hing or asafoetida
Sugar a pinch
Roasted and coarsely grinded groundnut a handful
Curry leaves 4-5
Coriander leaves for garnish

Method
Cook rice with little bit of salt .or you can also use leftover rice . Let it get cold.
Grind green chilli and ginger with bit of water . Mix with yogurt, put sugar and salt into the yogurt. Make sure you dont put too much salt because there is salt in rice too. Mix rice and yogurt .

Take oil in pan , let mustard seeds splatter then put hing , chillies,groundnut,curry leaves . Mix it with rice . Garnish with coriander leaves.
