Usad chi bhaji

Serves 2-3
Ingredients
2 cups Sprouted green moong
1 medium size onion
2 fresh tomatoes
2 green chillies
1 tsp Ginger garlic paste
4 tbsp Oil to fry
Fresh coriander powder Yellow powder Goda masala or indian garam masala
1 tsp Jaggery

Method to make sprouts with whole green moong
Wash and soak whole green moong overnight . Drain extra water and turn them into big enough sieve.so that air can pass, leave it for another day .by evening roots will start to grow and overnight they will develop fully.here in lagos temperature is just perfect for seeds to sprout.if you are living in colder region you could keep your seeds wrapped in wet muslin cloth and keep it in closed kitchen cupboard , but make sure its not tightly close , just enough to give warmth to seeds like a baby.:-). 

Method to fry 

  Take oil in pan let it be hot . Start with onion untill golden brown. Followed by green chillies, ginger garlic paste. When it leaves oil put tomatoes cook untill they leave oil . Now put corinader powder, goda masala yellow powder and nicely mix your sprouts . After they leave oil pour 2 cups of water and pressure cook for 1 whistle , mix with jaggery. Idea behind semi cooking sprouts is to retain their nutrition and taste . Serve with hot chapati or wheat bread.

Feta cheese and pasta salad

Serves 2
Ingredients 

1/2 onion medium size diced

1/2 tsp of dried oregano 

4 medium size tomatoes deseeded and diced 

2 medium size cucumber diced

Lettuce leaf handful two 

4 Tbsp of feta cheese diced scrambled

1 Tbsp of honey 

1 cup of pasta

3 Tbsp of olive oil 

Cook pasta , i used home made wheat pasta in noodle form . Mix all ingredients toghether and refreigerate for about 3 hours so that all veggies and pasta absorbs flavour of dressing .Serve chilled.

chicken cooked in barbeque sauce

Serves 8 pcs of small chicken legs

Ingredients
3 Tbsp of Heinz barbeque sauce
1 Tbsp of soya sauce
1 Tbsp Ginger garlic paste
1/2 tsp red chilli powder
Salt
Oil to cook about 3 Tbsp

Method
Slit chicken legs with knife from all sides . Marinade chicken with above ingredients for about 2 hours in refrigerator. After 2 hours let them sit get to normal temperature . You can either bake or shallow fry chicken legs untill they are cooked .
You can serve them with dinner rolls and salad of your choice .

Fried beans chinese style

Combination of sweet and sour with a bit of garlic and smoky flavour of seseme oil . I feel thats the best way of cooking fresh beans.

Serves 2
Ingredients
500 gm of fresh beans
2 cloves of garlic cut finely
1 tsp of honey or brown sugar
1 Tbsp of white vinegar
1 Tbsp of soya sauce
1 Tbsp of chilli garlic sauce
2 Tbsp of seseme oil
Salt
Water to boil beans

Method
Boil water and boil beans for 2 minutes .drain water and dip beans in ice cold water as soon as you take the beans out that healps in retaining the colour of beans to green . Peal fibres out from sides and cut them into halves .

Now in another pot take seseme oil make it very hot and put garlic .
As garlic gets light brown  put vinegar , soya sauce , honey , chilli garlic sauce ,salt and toss fried beans into it . For a minute . Off gas and let it stay in pan . As beans are already cooked they just need time for all ingredients to get inside but should not be overcooked or else they would loose their vitamins and texture . Also please note do not close the lid . Else they will loose their colour.

Stuffed chicken wheat bread

Serves 2
Ingredients
1/2 cup wheat flour
1/2 cup white all purpose flour
1 tsp salt
1Tbsp sugar
1 tsp dry active instant yeast
Warm water about 1 cup

For stuffing
1 medium size onion
Large pinch of kasuri methi
300-400 gms of minced chicken
1tsp of garam masala
1tsp of chicken tandoori masala
Salt
Red chilli powder

Method
Fry onion till golden brown and put a pinch of kasoori methi and other spices with salt and pepper . Cook minced chicken for 10 minutes or untill done . Usually it does ny take much time . Let it get cold for stuffing.

For dough
1.Take warm water activate yeast .
2.mix wheat and white flour with salt and sugar
3.knead dough
4 . Leave it for 45 minutes to 1 hour
When it gets double in size .
5. Take dough and divide them into 8 parts .
6. Roll each part to a round or square shape disc about size of your palm , stuff about 1 Tbsp of chicken in the middle of rolled dough .Spread it evenly and close
It using little water. Arrange them onto the greased baking tray with space in between.
repeat same step for all 8 parts .

Let them sit for another 20-30 minutes, in the mean time pre heat oven upto 180degrees . You would see that stuffed dough has risen in size . Bake it for 30 minutes and thy are ready to go .

Coconut rice

Basmati  rice cooked in coconut milk with all the flavours of veggies and herbs .Scrumptious treat for dinner . 

Serves 2
Ingredients
1 cup basmati rice
Coconut milk to cook about 2 glasses
1 medium size onion
Ginger garlic paste about 1 Tbsp
Tomato paste 3 Tbsp
1 cup cabbage grated
1 cup carrot grated
1/2 cup peas optional
1 tsp thyme
1tsp Red chilli powder
Salt

Method to make coconut milk
Break fresh coconut and grind with 1 glass of water ,strain coconut milk with the seave . Then put more water in the grinded coconut and take out milk in another pot . Note first milk is more flavourful than second one . 

Fry onion untill golden brown followed by ginger garlic paste thyme salt and pepper , peas except cabbage and carrot . Put rice and give it stir , and pour 1 glass of coconut milk into it . Close the lid and let it cook , when rice is about to done ,thrown in cabbage and carrot and stir lightly . Check rice if its cook else pour another glass of coconut milk or as much required .

Egg wheat roll

One bite of hot egg roll and i  remember delhi's cold winters and thick foggy morning .Egg roll is one of the best street foods of delhi . 

Serves 6 rolls of medium size
Ingredients for roll
2 eggs
1 cup of milk
1 cup of wheat flour
Salt
1/2 tsp of baking powder
1/2 tsp of baking soda
1 Tbsp of. Yogurt

For stuffing
1 cup of grated cabbage
1/2 cup of thin sliced onion
2 Tbsp of mint coriander  chutney( Grind handful of coriander , mint leaves and one green chilli and one clove of garlic)

For eggs 

Wisk eggs with milk and salt a pinch . 

Method

Knead dough with water,flour, baking soda ,baking powder, yogurt and salt . Let it sit for 30 minutes.


In the mean time make mint chutney, grate cabbage and thin slice onion , mix everything toghether . 

Now this is important part , divide dough into 4 parts . And roll them into disc of about palm size as diameter . Take hot flat pan , and put your disc on pan . Cook it from one side and turn and let it cook from another side , remove it from pan ,Now apply some butter on the pan and pour your wisked egg on pan like you do for an omelatte . Take your flat bread and put it on top of egg and cook egg untill its nicely done and carefully lift your bread covered with egg from pan and stuff it with veggies . And wrap it nicely from three sides.
