Usad chi bhaji

Serves 2-3
Ingredients
2 cups Sprouted green moong
1 medium size onion
2 fresh tomatoes
2 green chillies
1 tsp Ginger garlic paste
4 tbsp Oil to fry
Fresh coriander powder Yellow powder Goda masala or indian garam masala
1 tsp Jaggery

Method to make sprouts with whole green moong
Wash and soak whole green moong overnight . Drain extra water and turn them into big enough sieve.so that air can pass, leave it for another day .by evening roots will start to grow and overnight they will develop fully.here in lagos temperature is just perfect for seeds to sprout.if you are living in colder region you could keep your seeds wrapped in wet muslin cloth and keep it in closed kitchen cupboard , but make sure its not tightly close , just enough to give warmth to seeds like a baby.:-). 

Method to fry 

  Take oil in pan let it be hot . Start with onion untill golden brown. Followed by green chillies, ginger garlic paste. When it leaves oil put tomatoes cook untill they leave oil . Now put corinader powder, goda masala yellow powder and nicely mix your sprouts . After they leave oil pour 2 cups of water and pressure cook for 1 whistle , mix with jaggery. Idea behind semi cooking sprouts is to retain their nutrition and taste . Serve with hot chapati or wheat bread.

Feta cheese and pasta salad

Serves 2
Ingredients 

1/2 onion medium size diced

1/2 tsp of dried oregano 

4 medium size tomatoes deseeded and diced 

2 medium size cucumber diced

Lettuce leaf handful two 

4 Tbsp of feta cheese diced scrambled

1 Tbsp of honey 

1 cup of pasta

3 Tbsp of olive oil 

Cook pasta , i used home made wheat pasta in noodle form . Mix all ingredients toghether and refreigerate for about 3 hours so that all veggies and pasta absorbs flavour of dressing .Serve chilled.

chicken cooked in barbeque sauce

Serves 8 pcs of small chicken legs

Ingredients
3 Tbsp of Heinz barbeque sauce
1 Tbsp of soya sauce
1 Tbsp Ginger garlic paste
1/2 tsp red chilli powder
Salt
Oil to cook about 3 Tbsp

Method
Slit chicken legs with knife from all sides . Marinade chicken with above ingredients for about 2 hours in refrigerator. After 2 hours let them sit get to normal temperature . You can either bake or shallow fry chicken legs untill they are cooked .
You can serve them with dinner rolls and salad of your choice .

Fried beans chinese style

Combination of sweet and sour with a bit of garlic and smoky flavour of seseme oil . I feel thats the best way of cooking fresh beans.

Serves 2
Ingredients
500 gm of fresh beans
2 cloves of garlic cut finely
1 tsp of honey or brown sugar
1 Tbsp of white vinegar
1 Tbsp of soya sauce
1 Tbsp of chilli garlic sauce
2 Tbsp of seseme oil
Salt
Water to boil beans

Method
Boil water and boil beans for 2 minutes .drain water and dip beans in ice cold water as soon as you take the beans out that healps in retaining the colour of beans to green . Peal fibres out from sides and cut them into halves .

Now in another pot take seseme oil make it very hot and put garlic .
As garlic gets light brown  put vinegar , soya sauce , honey , chilli garlic sauce ,salt and toss fried beans into it . For a minute . Off gas and let it stay in pan . As beans are already cooked they just need time for all ingredients to get inside but should not be overcooked or else they would loose their vitamins and texture . Also please note do not close the lid . Else they will loose their colour.

Stuffed chicken wheat bread

Serves 2
Ingredients
1/2 cup wheat flour
1/2 cup white all purpose flour
1 tsp salt
1Tbsp sugar
1 tsp dry active instant yeast
Warm water about 1 cup

For stuffing
1 medium size onion
Large pinch of kasuri methi
300-400 gms of minced chicken
1tsp of garam masala
1tsp of chicken tandoori masala
Salt
Red chilli powder

Method
Fry onion till golden brown and put a pinch of kasoori methi and other spices with salt and pepper . Cook minced chicken for 10 minutes or untill done . Usually it does ny take much time . Let it get cold for stuffing.

For dough
1.Take warm water activate yeast .
2.mix wheat and white flour with salt and sugar
3.knead dough
4 . Leave it for 45 minutes to 1 hour
When it gets double in size .
5. Take dough and divide them into 8 parts .
6. Roll each part to a round or square shape disc about size of your palm , stuff about 1 Tbsp of chicken in the middle of rolled dough .Spread it evenly and close
It using little water. Arrange them onto the greased baking tray with space in between.
repeat same step for all 8 parts .

Let them sit for another 20-30 minutes, in the mean time pre heat oven upto 180degrees . You would see that stuffed dough has risen in size . Bake it for 30 minutes and thy are ready to go .

Coconut rice

Basmati  rice cooked in coconut milk with all the flavours of veggies and herbs .Scrumptious treat for dinner . 

Serves 2
Ingredients
1 cup basmati rice
Coconut milk to cook about 2 glasses
1 medium size onion
Ginger garlic paste about 1 Tbsp
Tomato paste 3 Tbsp
1 cup cabbage grated
1 cup carrot grated
1/2 cup peas optional
1 tsp thyme
1tsp Red chilli powder
Salt

Method to make coconut milk
Break fresh coconut and grind with 1 glass of water ,strain coconut milk with the seave . Then put more water in the grinded coconut and take out milk in another pot . Note first milk is more flavourful than second one . 

Fry onion untill golden brown followed by ginger garlic paste thyme salt and pepper , peas except cabbage and carrot . Put rice and give it stir , and pour 1 glass of coconut milk into it . Close the lid and let it cook , when rice is about to done ,thrown in cabbage and carrot and stir lightly . Check rice if its cook else pour another glass of coconut milk or as much required .

Egg wheat roll

One bite of hot egg roll and i  remember delhi's cold winters and thick foggy morning .Egg roll is one of the best street foods of delhi . 

Serves 6 rolls of medium size
Ingredients for roll
2 eggs
1 cup of milk
1 cup of wheat flour
Salt
1/2 tsp of baking powder
1/2 tsp of baking soda
1 Tbsp of. Yogurt

For stuffing
1 cup of grated cabbage
1/2 cup of thin sliced onion
2 Tbsp of mint coriander  chutney( Grind handful of coriander , mint leaves and one green chilli and one clove of garlic)

For eggs 

Wisk eggs with milk and salt a pinch . 

Method

Knead dough with water,flour, baking soda ,baking powder, yogurt and salt . Let it sit for 30 minutes.


In the mean time make mint chutney, grate cabbage and thin slice onion , mix everything toghether . 

Now this is important part , divide dough into 4 parts . And roll them into disc of about palm size as diameter . Take hot flat pan , and put your disc on pan . Cook it from one side and turn and let it cook from another side , remove it from pan ,Now apply some butter on the pan and pour your wisked egg on pan like you do for an omelatte . Take your flat bread and put it on top of egg and cook egg untill its nicely done and carefully lift your bread covered with egg from pan and stuff it with veggies . And wrap it nicely from three sides.

Egg lettuce salad

Serves 1
Ingredients
2 boiled eggs
About 200 gms of lettuce
Mayonise
Freshly grounded black pepper
Salt

Method
Cut lettuce and mix mayonise , salt and pepper and pieces of eggs .
And its ready to go .

Cheesy eggs on toast

Crisp buttery toasted bread ,scrambled semi cook eggs and hot melted mozrilla cheese on top for beautiful morning breakfast bite, with hot cuppa. Sure is heaven on earth.

Serves 4pcs of toast

Ingredients
2 eggs
4 pcs of bread round shape or square shaped
1 Tbsp of butter for frying eggs
4 Tbsp of butter for applying on bread
4 Tbsp of mozrilla cheese grated
Salt and freshly grounded pepper
Coriander to serve

Method
Break two eggs whisk them and
Semi cook them in butter with salt and pepper  . Apply butter on breads . Apply 1 Tbsp of scrambled eggs on bread followed by grated mozrilla cheese on each. Greese baking tray and broil them for 5 minutes or untill you see crispy golden brown bread and golden brown cheese.

Almond wheat cake in pot

Healthy and tasty wheat almond cake is best for daily intake of nutrition for my kiddies . And it is cooked in 30 minutes.

Ingredients
1 cup of coarsely grinded almond about 200 gms
1 cup of wheat flour / all purpose flour .
1 tsp vanilla essence
1 tsp of baking powder
1 tsp of baking soda
4 tsp of coco powder
A pinch of salt
1 cup of eggs
1 cup of butter unsalted or ghee or veg oil .

Method
Put a big cooking pot on a fire on medium flame. Put a base plate or tray upside down  so that your baking tray does not touch the pot.
This way we are pre heating the pot for a while.

In the mean time take 1 cup of eggs , whisk or churn them in mixer untill you see froth.
Mix flour and churn it again , followed by almond and other ingredients one by one .
Oil your baking tray , and pour your mixture evenly on the tray . This whole method takes less than ten minutes .  now keep your pot nicely inside the pot on a base tray . Cover the. Glass lid and watch the cake rising . After 15-20 minutes you can check cake by inserting tooth pick or knife if it comes clean means its done . Off flame and let it stay untill it gets cold . And you will have delicious cake ready in 30 minutes.

Shrimp oat patties

Crispy and juicy with whole lot of flavour inside  yet healthy . Thats shrimp patties .

Recipe serves about 12 patties
Ingredients
About 2 handful of shrimps medium size washed and deveined. 
1 full cup of oats to bind
1 red chilli whole minced 
4 cloves of garlic minced 
Handful of coriander leaves
1/2 tsp cumin roasted and grinded
Salt and black pepper

Grind garlic,pepper , cumin toghether and mix with shrimps , coriander ,salt , pepper . Mash with your hands so that shrimps leave their juices and get minced. Mix oat to the mixture . You will see oats act as binding agent. Make about 12 patties with your hands . Keep it for 5-10 minutes before you start frying them in deep pan but little oil just enough to cover its sides . Fry for atleast 2 minutes from each side to let shrimp cook from inside .  

Serve it with ketchup or chilli garlic sauce . 




Shrimp sandwich

If you and your family likes seafood then what else can be more healthy nutritious and easy to make meal to start a day than shrimp sandwich.
Its also good for kid's lunch box .

Serves 2 sandwiches
200 grams fresh shrimps washed and deveined. i am using medium size shrimps.
4 slices of wheat bread
Lettuce leaf
Slices of 1 onion
Slices of 1 tomato
2 slices of chedder cheese
Butter 4 Tbsp

Salt
And freshly grounded black pepper

Add 1 Tbsp of butter in pan and place shrimp , add salt and black pepper . Cook just for a minute and then off gas and close the lid . Shrimps does not take time to cook . If you cook for long period they would get hard and rubber like in texture .

Apply butter on each bread and warm slightly . Place handful of shrimps on the bread( butter side)
Place chedder cheese slice on top of follwed by lettuce , onion and tomato slices . Top up with second slice and dab with your hands . Or you can grill in your oven to do the same for 1/2 minute.   cut and serve  . Oats patties

Serves 2
Ingredients
4-5 medium size potatoes
1 cup oats
2-3 green chilli minced
An inch of ginger minced
Salt
Oil to shallow fry

Boil potatoes and mesh them. Mix all ingredients .
You would get a dough like mixture divide about 8 portions and make patties round . 

Shallow fry them untill they get golden brown. They are crisp healthy and tasty serve it with tomato ketchup .

I served it with "tamarind chutney" topped with onion and tomato . 

        


Split yellow mung rice served with chicken

Serves 2
Ingredients
1 cup of basmati rice
1 cup of split green gram lentil / yellow mung lentil
1 onion medium size chopped fine
2 tomatoes medium chopped fine
4 garlic cloves make paste
1/2 inch if ginger make paste
1 tsp of garam masala
1 Tbsp of coriander powder
1 tsp of cumin powder
Oil to cook
Water about 2-3 glasses
Recipe for rice :
In hot oil fry onion untill it gets golden brown .fry ginger garlic paste untill it leaves oil followed by tomatoes untill they leave oil . Put coriander powder and cumin powder fry for a minute and then put yellow split lentil and rice . Fry till they leave oil . Pour water and cover the lid untill rice is fully cooked.

Egg plant fried in schezwan sauce

Serves 2
Ingredients :
2 medium size egg plants cut into wedges about 8 pcs
A streak of spring onion
1/4 cup of green capsicum diced
1/4 cup of onion diced
2 cloves of garlic chopped finely
1 red pepper
4 Tbsp of seseme oil
1 Tbsp of vinegar
1 Tbsp of soya sauce
1 Tbsp of chilli garlic sauce
1/2 tsp of sugar
1Tbsp of corn flour
2 cups of water
Salt

Fry egg plants in 2 Tbsp of seseme oil untill they get nice golden brown colour. Sprinkle a pinch of salt on top .

In separate bowl take remaining 2 Tbsp of seseme oil and fry garlic untill it gets light brown colour.put finely chopped red pepper and spring onion . Followed by vinegar , chilli garlic sauce , sugar, soya sauce  . Mix corn flour in 1 cup of water and pour into pan . In one boil thrown in capsicum and onion and egg plant wedges and give another boil . At this stage you could put more water if you like light consistency .  garnish with spring onion . And served with rice noodles or plain steamed rice .

Shrimp dimsum


Recipe for dimsum covering :
Take about 1/2 cup of white flour
A pinch of salt
1 egg
1/2 cup of water
Mix egg with water and salt and knead dough .
Keep it for 20 minutes then divide dough into about 24-30 parts .
Roll them into very thin and round discs . Cover them with corn flour from both sides.

Recipe for shrimp as stuffing:
400 grams of shrimps,mince shrimp finely .

1Tbsp of oyster sauce
2 tsp Ginger minced
2 tsp of green chilli minced 

Salt
Mix everything and marinade shrimps for atleast an hour .
Take about tsp each for stuffing in rolled discs .Just fold them into half and stick them from each side . Boil water in pot and cook them in steamer for exactly 10 minutes . If overcooked shrimp may get hard.
